Ingredients
8 servings
Dressing- 1 cup soy or regular mayonnaise
- 3 Tbs. fresh lemon juice
- 2 tsp. prepared white horseradish
- 2 tsp. rice vinegar or balsamic vinegar
- 1 1/2 tsp. Dijon mustard
- 1 small clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 2 cups shredded green cabbage
- 2 cups shredded red cabbage
- 2 cups peeled, shredded carrots
- 2 cups shredded celery root or daikon
- 1 cup diced red onion
- 1 cup dried currants or raisins
Directions
- Make dressing: In medium bowl. mix all ingredients until well combined.
- In large bowl, combine both cabbages, carrots, celery root, red onion and currants. Add dressing and toss to coat. Season with salt and freshly ground pepper to taste and serve.
